Enjoy this guest post from Hilary! Want to guest post on LHL? See here for details.

When I was starting to create my first home, I moved eight hours away from my family. Every time I would get homesick, I made bread pudding. I spent several weekend evenings cubing up loaves of cheap white bread and trying to bake up the familiar taste of home.

I still love bread pudding after much has changed since those nights in my apartment. Through the years, I’ve learned how to make the perfect bread pudding. I don’t make it as often as I did, but I enjoy a much better-tasting bread pudding when I do.

Here are some of the things I’ve learned along the way that will help you make a delicious bread pudding from the start.

Choosing bread for your pudding

The key to a good bread pudding is choosing a good bread. I like to use a loaf of homemade bread, but specialty bread, like cinnamon swirl, is good too. Be sure you choose a yeast bread – a quick bread won’t work for this recipe.

It helps if the bread you use for this homemade bread pudding is stale. If your bread is still fresh, you can simply toast it a little in the oven. After it’s toasted (or stale), cube the bread and set them aside.

What’s a water bath?

For this recipe, we’re going to be using a water bath. This process is used in baking to prevent some foods from cracking or as in this case, becoming rubbery.

Make sure you choose a baking dish for your bread pudding that will fit inside of another dish.

Creating a water bath is an easy process. Nestle your baking dish inside a larger dish, then carefully pour water into the outside baking dish. Being careful not to spill, place the two dishes in your oven and bake according to the directions. Be especially careful when taking the hot dishes out of the oven when the baking is finished to prevent splashing that can burn you.

Choosing add-ins

Bread pudding is tasty just with good bread and cinnamon sugar. But add-ins can create a fantastic taste. Here are some delicious add ins you could try:

  • Chocolate chips
  • Raisins
  • Toffee Chips
  • Walnuts
  • Banana slices
  • Berries
  • Chopped Apples

Now that we’ve got some of the basics out of the way, let’s get started baking!

Ingredients in Old-Fashioned Homemade Bread Pudding

  • Butter. You can use salted or unsalted but if you used salted you can leave out the salt in the rest of the recipe. A vegan buttery spread would work in place of regular butter if needed.
  • Milk. This works best with a whole milk (even cream!) but you can also use a milk alternative for a dairy free version.
  • Eggs. These are essential and help keep everything together!
  • Sugar. Regular white sugar is needed for this recipe. I haven’t tried it with any alternatives.
  • Vanilla extract. This can be Homemade Vanilla Extract or store bought.
  • Cinnamon, salt, nutmeg, cloves. These are your needed spices for this recipe.
  • Cubed bread. This can be homemade or store-bought but a good hearty bread is necessary!

Extra Frugal Tip: You know I’m always looking for ways to make the most with what I have and save money, so I wanted to pass on this frugal tip! You can save your unused bread and bread heels to use in this recipe! Just pop them in the freezer and save them until you’ve collected the equivalent of a loaf (about 6 cups) and pull them out to make a delicious (and frugal!) bread pudding!

FAQs

Why is my bread pudding so watery? ›

Temperature Is Key

Finally, to avoid overcooking it, it's important to know when it's done. To check the inside to see if all the liquid has been absorbed, insert a knife into the middle of the pudding and create a small hole by pushing the bread to the side: If liquid begins oozing into the hole, it's not yet ready.

How do you know when a bread pudding is done? ›

Bake about 1 hour or until toothpick inserted in the center comes out clean. Another way to judge whether the pudding is fully baked, is to gently press down on the center of the pudding. If any custard comes up to the top, the pudding needs to be baked a little longer.

Should you dry out bread for bread pudding? ›

Making Bread Pudding Is Simple!

Stale bread holds its shape more easily when soaking up the custard mixture. Fresh bread tends to fall apart and turn to mush. If you don't have stale bread, you can heat cubed fresh bread in the oven to dry it out a bit.

Why did my bread pudding turn out eggy? ›

You are probably cooking your egg dishes too hot for too long. Eggs contain a lot of water and also chains of proteins; if you could see them, the proteins would be coiled like little springs.

How wet should my bread pudding be? ›

Let's get one thing straight right from the start though: bread pudding shouldn't be soggy. The top should be golden and firm (mine has a nice slightly crunchy texture from turbinado sugar) and the remainder should be moist, soft, and slightly springy.

How do you fix runny pudding? ›

Your best bet would be to mix a tablespoon of cornstarch and a teaspoon of sugar with some of the beverage and add it to the warm pudding. Heat it to a bubble and stir until it thickens.

Should bread pudding be gooey? ›

So, suffice to say, we understand the importance of getting your bread pudding just right. One major problem that you may have come across is bread pudding that is just too wet. A good bread pudding needs to be moist with a custardy-like texture, but it should not be anywhere close to runny.

Will my pudding thicken when it cools? ›

You should wipe a clear, clean line through the custard. Remove from heat. The pudding will thicken more as it cools.

What happens if pudding doesn't thicken? ›

Measure an alternative starch-based thickener, such as arrowroot powder, tapioca powder or rice starch, and combine it with the sugar called for in your pudding recipe. These alternative starches are comparable to cornstarch in thickening power, and twice as potent as wheat flour, so measure accordingly.

Is it OK to leave bread pudding out overnight? ›

Can bread pudding sit out overnight? Do not let your bread pudding sit out at room temperature for more than 2 hours after it has been baked. You should make sure you eat it within 4 days.

Do you eat bread pudding with a spoon or fork? ›

Advice: Ditch the fork – it's completely superfluous – and dig in with the spoon!

How many days is bread pudding good for? ›

How to Store Bread Pudding. Allow the bread pudding to cool completely after baking. Cover tightly or transfer to a shallow, airtight container. Store in the refrigerator for up to three days.

Why isn t my bread pudding setting? ›

One of the primary mistakes people make with bread pudding is that they remove it from the oven too soon or too late. If you take it out prematurely, the custard doesn't have the chance to cook, so it is still runny.

Why is my pudding gooey? ›

Pudding is usually runny because it has been stored in the refrigerator for too long or in an open space. Another cause could be due to improper cooking methods.

How do you keep a pudding pie from getting watery? ›

To fix this, you can cook the pudding mixture over low heat until it thickens, or add a thickener such as cornstarch or tapioca flour. Another possible reason for a runny banana cream pie is that the pie filling was not chilled properly before being added to the crust.

Which ingredient causes the pudding to thicken? ›

A key ingredient in instant pudding is gelatinized starch, a dried instant starch that readily absorbs liquids, which causes the pudding to gel when mixed with milk. Additional ingredients sometimes used as a thickener include gums that are soluble in cold water, such as carrageenans and alginates.

How do you thicken pudding sauce? ›

Combine equal parts cornstarch and cold water. Stir together until smooth. Pour into your sauce and cook over medium heat, stirring continually, until the sauce reaches your desired consistency. Test the sauce with a spoon.
