Ingredients

  • 14 cherry tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 pre-baked pizza crust
  • 1/4 cup prepared Alfredo sauce
  • 1 cup shredded mozzarella cheese
  • 1 cup pre-cooked shredded chicken
  • 1/4 cup Parmesan cheese freshly grated
  • 1/3 cup chopped green onions
  • 10 fresh basil leaves torn or chopped

Instructions

  • Heat your propane portable grill, campfire, Dutch oven or other cooking device. *See note below.

  • In a small bowl, toss the tomatoes in the olive oil, salt and pepper.

  • Use a cast iron grill pan, grill grate or grilling basket to char the tomatoes over medium-high heat.

  • Build the pizza starting with the pizza crust and then adding the Alfredo sauce, mozzarella cheese, chicken and charred tomatoes.

  • Place the pizza over your campfire, propane grill or in your cast iron Dutch oven for baking covered using medium heat. All of the ingredients are already cooked in this recipe so you are just toasting the crust, heating the ingredients and melting the cheese.

  • Remove the pizza from whichever heat source you are using and top with Parmesan cheese, green onions and fresh basil leaves. If you have a little of the seasoned olive oil leftover from tossing the tomatoes, drizzle it over the pizza too.
