I do love summer for all its fabulous produce and all those wonderful festivities! And I guess you could say I’m in a patriotic mood a little early this year. I think with all the upheaval that has happened in my life as of late; it feels so good to have something dependable in the near future to look forward to.
Every year, we go to a local high school, walk out to the field, lay down a blanket and a picnic, and wait for the fireworks to start directly over our heads. Mini Chef gets very excited at the idea of staying up late and seeing all those beautiful colors explode into the night sky, and I enjoy the 4th more and more every year simply due to Mini Chef’s excitement. As a parent, you really do learn to see the world through your child’s eyes. And what an amazing view it is!
So this year, I thought I’d plan out our picnic a bit early so that I can share the menu with you guys too. This Clean Eating Coconut Berry Salad will most definitely make it into our picnic basket. I mean, let’s face it. Good food AND fireworks? What’s not to love?
What Berry Goes Well With Coconut?
If blueberries and strawberries aren’t your thing, you can swap them out for blackberries and/or raspberries. All of these berries go well with coconut.
Recipe Additions
There are so many ways to enjoy this recipe. If you don’t mind a change in the color scheme of the recipe, here are a few suggestions:
- Sprinkle with lime juice at serving
- Add a dollop of coconut cream or coconut whipped creamfor a creamy fruit salad.
- A splash of heavy cream if you don’t mind the dairy.
- Add a sprig of mint
- Add some grapes
- Mangoes are a nice addition.
- Melons are also a good option.
- Add peaches, nectarines, or even kiwi.
- Fresh pineapple would be a great addition or other tropical fruit.
- Mandarin oranges could work well here.
- A banana would be a great mix in, as would papaya.
About The Ingredients
Fresh strawberries – The ripest berries have the best smell. Smell the bottom of the container (they usually have holes in the bottom). The best-smelling package wins.
Fresh blueberries – Do not use frozen blueberries. You definitely want fresh berries here.
Dried coconut flakes – Unsweetened. These come in different “sizes.” I opted for the finer-grated flakes. But you can use a larger or thicker version as well. Whatever you think will give you the best texture in your salad.
Lemon juice – Fresh is best, but bottled will do.
Chia seeds – These are optional, but add a nice crunch.
Honey – Or maple syrup. This is optional and added to taste if the berries aren’t sweet enough.
How To Make A Coconut Berry Salad
In a large mixing bowl, combine all ingredients and stir well to coat the berries in the coconut.
Serve slightly chilled.

Ingredients
- 2 cups de-stemmed & quartered, fresh strawberries
- 2 cups blueberries
- 1 tbsp. dried coconut flakes, unsweetened
- 1 tbsp. lemon juice
- 1 tbsp. chia seeds
- 1-2 tbsp. honey or maple syrup (optional – to taste if the berries aren’t sweet)
