Baked Mini Cake Doughnuts with Maple Glaze {Recipe} (1)

On my recent trip to the Wilton headquarters (which included a mini shopping spree at the annual Wilton tent sale) I picked up two mini doughnut pans. I usually try to steer clear of “one use” pans, but they werejust too cute to pass up! And I love mini desserts so much I think I’ll find plenty of reasons to make good use of my new pans. In fact, just this week a friend called to see if I could help bring some doughnuts to church on Sunday as a special “Doughnuts for Dads” after church treat (in celebration of Father’s Day). Of course I canbring doughnuts… and I’ll make them myself!

The Wilton pan comes with a recipe right on it, so I thought that would be a good place to start. I gave it a practice run and I’m quite happy with it. I will be experimenting with other recipes as time goes on, but this was a nice starting point.

Just made these with a normal-sized doughnut pan- it made 8. They’re cooling right now, will glaze them later, but I tried one that broke (forgot to grease the pan on the first batch, the rest came out ok with a little coaxing from a small spatula, but one broke on the way out) and it was very nice. I don’t have maple extract, going to do almond. For future reference, do you think it would work with maple syrup? I’m not sure the texture would be right for a glaze.

FAQs

What is maple glaze made of for donuts? ›

The glaze is pretty simple. Butter, real maple syrup, powdered sugar, and then plenty of vanilla. Not too strong, not too sweet, but just right. Especially when dipped into or drizzled over warm maple doughnuts.

Can I bake donuts without a donut pan? ›

You can successfully make a doughnut pan out of a muffin pan and aluminum foil. The doughnuts were perfectly moist, fluffy and delicious. They'll be smaller than your standard doughnut and certainly not uniform in shape, but the taste is all there.

What are the 3 basic ingredients in glaze? ›

A BASE GLAZE is a mixture of these three basic groups: SILICA, FLUX AND ALUMINA.

How do you make maple glaze thicker? ›

Powdered sugar thickens and emulsifies the glaze, helping it harden once it's cool. A pinch of salt sharpens the flavors if using unsalted butter.

Is it better to bake or fry donuts? ›

While many prefer the light and crispy texture of a fried donut, leaving the deep fryer in the cabinet and baking your cake donuts instead makes for healthier, less oily donuts. It's also safer and easier to clean up, given that you don't have to deal with lots of hot oil.

Do cake donuts need yeast? ›

While yeast is the leavening agent in yeast doughnuts, cake doughnuts rely on baking powder. Cake doughnuts are typically made with a mixture of butter, sugar, eggs, flour and baking powder.

How do you keep donuts moist in the oven? ›

Place your donuts in storage bags or airtight containers.

If you plan on eating your donuts within 1-2 days, you can just keep them at room temperature. Definitely put them in airtight bags or containers though so they stay fresh! The only time this isn't a good idea is when your donuts are cream-filled.

What is glaze on donuts made of? ›

Glaze or fill as follows, and serve as soon as possible. Whisk together 2 cups powdered sugar, ¼ cup milk and 1 teaspoon vanilla until smooth. When the doughnuts are cool enough to handle, dip into the glaze; if you like, flip them so the tops they're completely covered. Put on racks to let the glaze harden.

What is maple syrup made of? ›

The basic ingredient in maple syrup is the sap from the xylem of sugar maple or various other species of maple trees. It consists primarily of sucrose and water, with small amounts of the monosaccharides glucose and fructose from the invert sugar created in the boiling process.

What is maple bar frosting made of? ›

Make the maple icing:

Place 1/2 cup packed light brown sugar, 4 tablespoons unsalted butter, 1/4 cup maple syrup, and 2 tablespoons milk in a small saucepan over medium-low heat. Cook until the butter melts and the sugar dissolves, but do not boil, 5 to 6 minutes.

Can I use maple syrup instead of honey in a glaze? ›

You can usually count on a honey substitute to work well in baked good recipes. If the honey you're replacing is in a sauce, a glaze or marinade for meat or vegetables, use maple syrup in its place. It'll act in much the same way, even if it changes the flavor of the dish a bit.
