Astral Ore is super late-game content, so first off, you gotta defeat the Wall of Flesh to get your game into Hardmode. Then, you need to take down the three mechanical bosses (The Twins, The Destroyer, Skeletron Prime). After that, summon and defeat Astrum Aureus in the Astral Infection biome. Once you've got that big baddie out of the way, the Astral Ore will start appearing in the Astral Infection. But don't forget, you'll need a pickaxe with at least 210% pickaxe power to mine it. Something like the Picksaw or a stronger pickaxe is your go-to.
